Hawaiian Chicken
   
Amount Measure Ingredient
4    Chicken Breasts or Chicken Thighs
8 oz. Pineapple Chunks, Drained
1/2  cup Red Bell Peppers, Chopped
1/2 cup Onion, Coarsely Chopped
1/4 cup Honey
1/4 cup Red Wine Vinegar

Preparation

Preheat oven to 350. 

Drain pineapple, reserving juice. Combine juice, honey and vinegar. 

Place chicken in an 8 x 13 baking pan. Sprinkle pineapple and vegetables over top. Pour juice mixture over. 

Bake until chicken is done, about 45 minutes. 

Yield: 4 Servings
