Snowy Day Breakfast Casserole

Preparation
Fry bacon in a large skillet. Drain and crumble, set aside.
Add potatoes, onions, and peppers and sauté until potatoes are crispy and onion soft. Stir in crumbled bacon.
Transfer to greased 8-inch square baking dish.
Pour egg substitute over.
Sprinkle with cheese.
Bake at 350 until eggs are set, about 20 minutes.
